You would think that Chardonnay has already reached its pinnacle of excellence in Burgundy or in Champagne. But here it surprises us once again on the limestone soils of the south. This grape proves its capacity to adapt to soils with high pH, where it is able to express great freshness even when bathed in sunshine. This wine was made from a blend of well-ripened Chardonnay and earlier-picked grapes with good acidity. Aged in oak, this Chardonnay is complex and elegant. The grapes are harvested during the night and pressed immediately. The best 20% of the juice is vinified in barrels and aged for 6 months on its lees using battonage, and the remainder is vinified in stainless steel.
