A delicious glass of fizz that hows why Cava is now taken seriously as a sparkling wine.

Dominio de la Vega is a small winery in Utiel-Requena, Inland from Valencia. The domaine was founded in 2001 by three families, the Pardo, Exposito and Faubels who had previously built up Cavas Y Vinos Torre Oria in the region.
They are housed in 19th century buildings, lovingly restored. and they own 17 hectares of vineyards on three distinct soils types, clay for the Macabeo, limestone for the Chardonnay and clay/limestone for the Bobal. The vineyards are around 900 metres above sea level – vital in this hot part of Spain for maintaining freshness in the wines.

This is made exclusively from Macabeo grapes from vines that are an average of 25 years old. It becomes sparkling by the ‘méthode traditionelle’ of a secondary fermentation in bottle (just like Champagne) and is aged on its lees for around 10 months to add complexity.

The nose is fresh and elegant with aromas of citrus and green apple with hints of white bread. A lovely soft and creamy mousse tantalises the taste buds and adds extra pleasure to the lovely fruit. This is what quality Cava is all about.

A great aperitif on a warm evening and with simple shellfish. Best enjoyed at a tapas bar in Barcelona so close your eyes and dream.
