Within the prestigious satellite appellation of Montagne-Saint-Émilion, Château Cardinal’s 10ha of vines average 30 years of age. Here Merlot, with Cabernets Franc and Sauvignon, grows on argilo-calcaire soil. Grapes are harvested at full maturity, sorted, and pressed at the winery. During vinification the temperature is carefully monitored to achieve the desired aromas and structure in the wines, before maturation in vats and casks for over a year. The wine is then allowed further maturation in bottle before release.
A blend of 70% Merlot, 25% Cabernet Sauvignon & 5% Cabernet Franc. Deep ruby colour, with ripe berry fruit on the nose and a mellow, lightly tannic structure with notes of oak spice. A full-bodied, well-balanced wine with a seductive finish. Approachable and graceful, a very calm, collected and precise Bordeaux.
You can’t go wrong with a glass of this with grilled beef steak or hard cheeses.
