2022 Peacock Wild Ferment Chenin Blanc, Stellenbosch, South Africa

The grapes are mainly sourced from old bushvines aging between 20-50 years old along with fruit from the biodynamic vineyards of Waterkloof, who own the winery.

Fermentation happens spontaneously from wild yeast in a combination of old 600 litre barrels and concrete tanks. The wine is aged for 6 months on lees to add complexity.

Soft but complex nose of spicy herb and honey. Plenty of citrusy freshness on the palate and a lush, almost waxy, texture. There’s a lot going on here and as drinkable as it is, this is a wine to savour rather than quaff. But who am I to stop you.

Quite a versatile wine than would pair nicely with barbequed chicken, pork belly or creamy pasta dishes.
